HYDERABADI DUM BIRAYNI RECIPE

                                                       Hyderabadi Dum Biryani

I think every one Making biryani kind of Art. Each step is very important but a little patience to become a Biyani Master.Thats'y i am going to share World Famous Dish Kacche Gosht Biryani (we called as a Hyderabad Mutton Dum Biyani) in restaurant style

Ingredients:
Mutton -1kp with bones
Basmati Rice - 1kg
Sliced fried onions -1/2 kg
Green Chili Paste - 1/4 kg
Oil - 1Cup
Turmeric Powder - 1table spoon
Red Chili Powder - 2table spoon
Coriander Powder- 1 table spoon
Pine Apple Paste - 1/2 table spoon(for tendering agent)
Whole garam masala - 6pi\cs each(cinimon, cardamom, coves, cumin,,mace,etc)
Bayleaf - 1pcs
Curd: 3cups
Coriander leaves chopped - 1 cup
Mint leaves chopped - 1 cup
Ghee - 2table spoon
Safron for color - 1table spoon
Garam masala powder - 1 table spoon
Chapati Dough - 1/4 kg
Lemon/ venigar - 1 table spoon
Fried Cashew nuts for garnish - 2 table spoon
Milk - 2 table spoon
Salt - 2 table spoon

Making Procedure:

1st Step Marination Process:

  • Wash the mutton 2 to 3 times
  • Add red chili powder,Some Brown Onions, Green chili paste, turmeric powder, chopped coriander leaves, mind leaves,lemon juice, oil, salt, pine apple paste, garam masala powder, coriander powder
  • Mix it for 5 to 10 mins
  • Keep it refrigerator for 8 to 10 hours(whole night)

2nd Step Marination Masala:

  • Take out the marination mutton from refrigerator 
  • Add curd and red chili powder, ghee, garam masala powder,  coriander powder, Some brown onion
  • Mix well 5 to 10 mins
  • Keep a side for 15 to 20 mins


3rd Step Rice preparation: 

  • Heat the water till bobble comes from water
  • Now add whole garam masala, salt, oil & Basmati Rice
  • Boil the rice 10 to 15 mins till rice half cooked
  • Stain the half boiled rice


4th Step Final procedure:

  • Take a pan add marinated Mutton adjust the uniformly in bottom
  • Now add half boiled rice do not mix 
  • Sprinkle the onion fried,cashew nuts, mix saffron with milk for colour 
  • Take chapati pan heat it for 5 mins
  • Take marinated half boiled biryani put it on pan
  • Take Chapati dough roll it out and apply on pan edges for covering lid because mutton will cook steam 
  • Cook for 40 to 45 mins with flame
  • Serve Hot
