JACK FRUIT BIRYANI
Today i am going to share Jack fruit biryani famous biryani from Bhimavaram in AndhraPradesh. We use to called as Panasa biryani
Ingredients:
Raw jack fruits - 1/2 kg ( cut in to medium dices)
Slice onions - 100 grams
Curd - 100 grams
Coriander leaves - 1 bunch ( fine chop)
Mint leaves - 1 bunch ( fine chop)
Salt - as per taste
Ginger garlic paste - 1 table spoon
Red chili powder - 2 table spoons
Green chili - 5 to 6 pcs
Turmeric powder - 1/4 table spoon
Basmati rice - 2 cups
Corriander powder - 1/2 table spoon
Water - 4 cups
Garam masala powder - 1/2 table spoon
Cinnamon - 3 to 4 pcs
Cardamom - 3 to 4 pcs
Cloves - 3 to 4 pcs
Cumin - 1/4 table spoon
Bay leaf - 2pcs
Mace - 1 pcs
Ghee - 1 table spoon
Refined oil - 2 table spoon
Making process:
- Wash the rice in bowl souk it for 1/2 an hour
- Take a raw jack fruit put in pan
- Add some water, turmeric powder, salt boil for 10 to 15 mins
- Take out the boiled jack fruit from water put it a side
- Take a rice bowl add ghee, oil
- Heat the oil & ghee till ghee melt then add Cinnamon, Cardamom, Cloves, Cumin, Bay leaf, Mace mix it for 2 mins
- Then add Sliced onion mix well till onion become golden color
- Then add ginger garlic paste mix well till raw flavor gone
- Add red chili powder, coriander powder, garam masala powder, salt mix it 2mins
- Then add Boiled Jack fruit mix it 3 to 4 mins
- Add Curd, Coriander leaves, Mint leaves mix it for 2 mins
- Now add Souk rice mix it 5 mins
- Add 4 cups of water, salt as per taste
- Let it cook with high flame 10 mins mix occasionaly
- Then cook wtih medium for 7 to 8 mins
- Remove from flame put it room temperature 10 to 15 mins
Serve hot
